Spaghetti Squash Pizza
Ingredients:
Crust
1 Spaghetti Squash
2 eggs
1/2 cup shredded mozzarella
Toppings (feel free to get creative!)
1/2 cup shredded mozzarella
1/3 cup marinara sauce
1/3 cup grated parmesan
fresh basil (optional)
Directions:
Preheat oven to 400 degrees.
Poke the spaghetti squash with a fork all around and microwave for 4 minutes.
Cut the spaghetti squash in half and scrape out the seeds.
Roast face down on a baking sheet for 1 hour.
Once cooled, scrape out the insides of the spaghetti squash. Using paper towels, a cheese cloth, or a clean dish rag, squeeze the water out of the squash (this is really important-there is going to be a lot of liquid, this will help make the crust crispy).
In a bowl, mix together the eggs and mozzarella.
Transfer the mixture to a baking sheet and form into a pizza pie shape.
Bake for 15 minutes.
Take out the crust and add the cheese, sauce, and basil, or toppings of your choice.
Bake for 5 more minutes, broil on high for 2 minutes, cool, slice and serve!
