Spaghetti Squash Pizza

Ingredients:

Crust

  • 1 Spaghetti Squash

  • 2 eggs

  • 1/2 cup shredded mozzarella

Toppings (feel free to get creative!)

  • 1/2 cup shredded mozzarella

  • 1/3 cup marinara sauce

  • 1/3 cup grated parmesan

  • fresh basil (optional)

Directions:

  1. Preheat oven to 400 degrees.

  2. Poke the spaghetti squash with a fork all around and microwave for 4 minutes.

  3. Cut the spaghetti squash in half and scrape out the seeds.

  4. Roast face down on a baking sheet for 1 hour.

  5. Once cooled, scrape out the insides of the spaghetti squash. Using paper towels, a cheese cloth, or a clean dish rag, squeeze the water out of the squash (this is really important-there is going to be a lot of liquid, this will help make the crust crispy).

  6. In a bowl, mix together the eggs and mozzarella.

  7. Transfer the mixture to a baking sheet and form into a pizza pie shape.

  8. Bake for 15 minutes. 

  9. Take out the crust and add the cheese, sauce, and basil, or toppings of your choice.

  10. Bake for 5 more minutes, broil on high for 2 minutes, cool, slice and serve!
