Chickpea Salad
Ingredients:
1 can of chickpeas, drained and rinsed
1/4 cup of plain greek yogurt (I used Two Good Yogurt)
1/2 tbsp fresh dill
1/2 tsp onion powder
1 tsp honey
juice of 1 lemon
salt & pepper to taste
Directions:
Drain and rinse the chickpeas.
Empty the chickpeas into a medium-sized mixing bowl. Using a fork or a masher, mash the chickpeas until they are no longer whole chickpeas (don't mash too much).
Add in the greek yogurt, fresh dill, onion powder, honey, lemon juice, salt and pepper.
Eat plain, in a wrap, in lettuce, or on a sandwich!
