Salmon Stir Fry
Ingredients:
1 piece of salmon
2 cloves of garlic
1 tsp olive oil
1 tsp onion powder
1 tsp salt
1 tsp pepper
2 tbsp coconut aminos
1 tsp sesame oil
1 cup chopped asparagus
1 cup sliced mushrooms
2 cups cauliflower rice
handful of spinach
sriracha (optional)
Directions:
Add the olive oil to a sauté pan on medium-low heat. Once hot, add in the chopped garlic and sauté until lightly browned.
Turn the heat up to medium and add the salmon (skin side down) to the pan. Season with onion powder, salt, pepper, coconut aminos, and sesame oil.
Once the liquids start to sizzle in the pan they will start to form a glaze; use a spoon and pour the glaze on top of the salmon.
After 7 minutes (or until the sides of the salmon begin to pink up), flip the salmon and let it cook on the other side for another 5 minutes. Once cooked, take the salmon off of the pan, but do not turn off the heat.
Using the leftover sauce from the salmon, add the asparagus and mushrooms into the pan and sauté until soft.
Add in the cauliflower rice and spinach. Season with salt and pepper to taste.
For some extra spice add some sriracha. Once thoroughly cooked, plate with the salmon and enjoy!
