Peanut Butter Truffles
Ingredients:
1 cup peanut butter
1/2 cup oat flour
1/3 cup maple syrup
splash of vanilla extract
chocolate chips
1/2 tsp coconut oil
flaky sea salt
Directions:
In a bowl combine peanut butter, maple syrup, vanilla, and oat flour. Mix until well combined and a dough-like consistency is formed.
Form into balls (I made about 35 balls), put on a baking sheet lined with parchment paper or non-stick spray, and put the balls into the freezer for about 20-40 minutes.
In a microwave safe bowl, combine the chocolate chips and coconut oil. Heat in 30 second intervals, stirring in between each interval, until the chocolate is completely melted.
Take the peanut butter balls out of the freezer and coat each one completely in chocolate. Place them back on your baking sheet, sprinkle with flaky sea salt (optional but highly recommended) and enjoy!
