Homemade Falafel
Yields 12 falafel
Ingredients:
1 (15 oz) can chickpeas
1/2 white onion (chopped)
3 cloves garlic
1/3 cup fresh parsley
1/2 juiced lemon (or 1 tbsp lemon juice)
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp coriander
salt & pepper to taste
1/4 cup oat flour
Directions:
Drain and rinse chickpeas.
Add chickpeas, onion, garlic, parsley, lemon juice, paprika, cumin, coriander, and salt & pepper into a food processor. Pulse until all ingredients are well incorporated (don’t over mix, you will want chunks of chickpeas to still be visible in the falafel dough).
Transfer mixture to a bowl and combine with flour. Mix the flour in until a dough forms.
Cover the falafel dough and refrigerate for at least an hour (this step is optional but highly recommended— it’ll make the dough much easier to handle).
Form dough into 12 balls.
Preheat oven to 400 degrees and bake on a lined baking sheet for about 20-30 minutes (cook time may vary) OR air fry the falafel at 400 degrees for 15-20 minutes in the air fryer (this is my preferred method).
