Egg Roll in a Bowl
Ingredients:
1 lbs ground meat (turkey/chicken/beyond meat/beef)
1 bag coleslaw mix
1 egg
1 inch knob of ginger (chopped)
5 cloves garlic (chopped)
2 tsp olive oil
2 tsp sesame oil
1/2 tsp garlic powder
1/4 cup soy sauce/coconut aminos
2 tsp rice vinegar
1 tsp maple syrup
1 tsp sriracha
2 stalks green onion
Directions:
Heat 2 tsp of olive oil in a pan on medium high heat.
Add chopped garlic and ginger into the pan and let cook for ~1 minute/until golden brown.
Add in the ground meat and cook until done. Season with salt and pepper to taste.
Take the meat out of pan and set aside.
In a small bowl combine coconut aminos, rice vinegar, maple syrup, and sriracha.
In the same pan that you cooked the meat in, add 2 tsp sesame oil on medium heat.
Add in coleslaw mix and cook down a bit. Season with garlic powder, salt and pepper.
Add the meat back into the pan with the coleslaw.
Add the sauce into the pan.
Make a well in the middle of the pan and crack an egg. Let it sit for ~1 minute, then scramble and combine with the rest of the dish.
Season with salt and pepper to taste.
Plate, add green onion and sesame seeds, and enjoy!
