Chocolate Peanut Butter Funfetti Cups

Ingredients:

Bottom Chocolate Layer

  • 1/2 cup chocolate chips

  • 1 tsp coconut oil 

Peanut Butter Funfetti Dough

  • 1/3 cup + 1 tbsp peanut butter

  • 1 tsp vanilla

  • 3 tbsp maple syrup

  • 3/4 cup almond flour

  • 3 tbsp rainbow sprinkles

Top Chocolate Layer

  • 1/2 cup chocolate chips

  • 1 tsp coconut oil

Directions:

Line muffin tins with liners (makes about 7-8 cups).

Bottom Chocolate Layer

  1. Melt chocolate chips and coconut oil in a bowl in the microwave at 30 second intervals until completely melted.

  2. Add melted chocolate to each muffin cup and freeze for 10 minutes.

Peanut Butter Funfetti Dough

  1. Combine peanut butter, vanilla, maple syrup, almond flour, and sprinkles in a bowl.

  2. Form into 6 small balls and press into each cup on top of the bottom chocolate layer.

Top Chocolate Layer

  1. Melt the rest of the chocolate chips with the coconut oil in the microwave at 30 second intervals.

  2. Top each cup with chocolate.

  3. Freeze for at least 30 minutes.

  4. Enjoy!
