Sweet Potato Nachos
Ingredients:
2-3 medium sweet potatoes
1 tbsp olive oil
1 tsp salt & 1 tsp pepper
1 tsp onion powder
1 tsp garlic powder
1/2 can drained and rinsed black beans
1/2 chopped white onion
1/3 cup mexican cheese
Directions:
Preheat the oven to 400 degrees.
Slice the sweet potatoes into thin "chips".
In a bowl season the potatoes with olive oil, salt, pepper, onion powder, and garlic powder.
Line a baking sheet with parchment paper and spray with non-stick spray. Place the potatoes on the sheet and bake for 40 minutes or until perfectly crisp.
In a pan on medium heat add 1 tsp of olive oil. Sauté the chopped onions until translucent and fragrant.
Transfer the sweet potato "chips" to a skillet if you have one (any pan works for this!) and top with onions, black beans, and cheese.
Broil on high for 4 minutes or until cheese is golden brown.
Top with sliced avocado and any other toppings you'd like!
