Salted Caramel Cookies
Ingredients:
Cookies:
2 cups almond flour
1/4 cup + 1 tbsp coconut sugar
1/4 cup coconut oil (melted and cooled)
2 tbsp water
Caramel:
1/3 cup maple syrup
2 tbsp almond butter
2 tbsp coconut oil
Flaky sea salt
Directions:
Preheat the oven to 350 degrees. Grease/line a baking sheet.
In a bowl combine the almond flour, coconut sugar, coconut oil, and water. Mix until a dough is formed.
Form ~12 cookies.
Bake cookies for 20 minutes, or until they’re golden brown (If they’re soft out of the oven, that’s ok! They will harden as they cool off).
While the cookies are cooling, make the caramel.
In a saucepan (don’t turn the heat on yet), combine maple syrup, almond butter, and coconut oil.
Turn the heat on medium-high and begin to stir. As the caramel heats up it will start to bubble. Make sure you continue to stir—the caramel will form pretty quickly.
Once caramel is formed, spoon it on top of each cookie.
Top with flaky sea salt and enjoy!
